A brand new week awaits, and that means a new set of endless possibilities. I made my to-do-list for the week along with some egg and potato tartlets that are technically nothing but the easiest, most fancy version of an omelette.
• 3 eggs
• 4 baby potatoes
• 1/2 red onion
• 4 cherry tomatoes
you’ll prepare it like:
• set the oven to 180*C
• mix 2 egg whites and 1 egg yolk and pour into a big bowl
• chop the potatoes in little wedges and add then to the egg mix and mix everything thoughrolly.
• add the mix to your oven-dishes and top it up with the cherry tomatoes
• place inside the oven for 25 minutes and… voilá!
