Avocado Pesto

Hey everyone!

Let me start by saying thank you for your birthday wishes, and for your love and support since the start of this little platform. It’s a message I truly believe in and a change I’d like to invite in the world, and I love to see how many of you are making small changes throughout the recipes we share and building a path to a healthier lifestyle.

I never was one to like pesto that much. I have to be honest, I’d always go for tomato sauce but since discovering this alternative, elt’s say it all changed! Here are a couple of things that make me happy about this recipe:

  • it’s green, and I love the color green – the color of hope;
  • it’s avocado – it’s good for your brain, it’s creamy and
  • it’s pesto – and anything that goes on top od spaghetti makes me happy;

All you need is a food processor and the following:

Serves: 4

Ingredients: 

  • 1tablespoon of olive oil;
  • 2 ripe avocados;
  • 1 cup of fresh basil leafs;
  • 3 garlic cloves;
  • 1/4 cup of pine nuts;
  • 2 tablespoons of lemon  juice;
